To start read a previous post of mine about the configuration of apache and php.
http://www.wowwebdesigns.com/wowbb/forum12/791.html
Now, a good project to start is maybe a survey system (which I've been working on for my school) or maybe a site layout system. But if you want something more simple to start out with then try using multidimensional arrays to orginize data from a form input. If any of this is unclear then just reseach it on google. You can find many tutorals on php.
First I would go to php.net to get a basic understanding of functions in php. Then when you got that down then search how to use multiple functions to make complicated applications.
Hope that can get you started on learning php. If you have any questions I think I can help you with most of them.

I found a great tutorial on getting started, it has a tutorial on displaying the date, and a bunch more.
http://perl.about.com/cs/beginninphp/a/013103.htm
Read the first part (You can skip the installation is you want.) of the Getting started with php. Then click on the link below that says 'Beginning PHP Tutorial' and you'll see a link to a tutorial on the very basic elements of php. Then when you got that down, click back and to your right their should be more links to php tutorials which have the one on displaying the date. Hope you have fun.
I'll find some more tutorials for you.
